- In a medium saucepan, add sugar over medium heat. Allow it to melt undisturbed.
- Once melted and golden, quickly pour it into an ungreased loaf pan, tilting to coat the bottom evenly.
- In a mixing bowl, whisk together sweetened condensed milk, coconut milk, eggs, vanilla extract, and shredded coconut until smooth.
- Pour this mixture over the hardened caramel in your loaf pan.
- Preheat your oven to 350°F (180°C) and bake for 50-55 minutes in a water bath.
- Let it cool at room temperature for 30 minutes before refrigerating for at least 3 hours or overnight.
- To unmold, warm the loaf pan in warm water for a couple of minutes and invert onto a serving plate.
