- Preheat your oven to 220°C (425°F) and line a baking sheet with parchment paper.
- Sift together the self-raising flour, baking powder, and salt in a large mixing bowl.
- Cut the cold butter into the mixture until it resembles coarse crumbs.
- Stir in the grated cheddar cheese.
- In a separate bowl, whisk together the milk and beaten egg.
- Create a well in the dry ingredients and gradually pour in the wet mixture, mixing gently.
- Turn the dough onto a floured surface and knead gently until combined.
- Shape the dough into a disc about 2 cm thick and cut into 8 triangles.
- Place cut scones on the baking sheet and brush tops with milk if desired.
- Bake for 15-20 minutes until golden brown.
