  • 1 large Egg Use at room temperature.
  • 1 teaspoon Vanilla Extract
For the Icing
  • 1 cup Powdered Sugar For the icing.
  • 2 tablespoons Milk Thins the icing for drizzle.

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together all-purpose flour, baking soda, espresso powder, ground cinnamon, ground ginger, ground cloves, ground nutmeg, and salt.
  3. Cream unsalted butter with brown sugar and granulated sugar until light and fluffy.
  4. Add cooking molasses, egg, and vanilla extract to the mixture and beat until smooth.
  5. Gently combine dry ingredients with wet mixture until just combined.
  6. Scoop cookie dough onto prepared sheets and chill in the refrigerator for 15 minutes.
  7. Roll chilled dough balls in granulated sugar and space them on the baking sheet.
  8. Bake for 10-11 minutes until puffy; cool on the baking sheet for 10 minutes.
  9. To prepare icing, whisk powdered sugar, milk, and vanilla extract until smooth, then drizzle over cooled cookies.
