- Peel and cut potatoes into quarters, then boil in salted water for about 15–20 minutes until fork-tender. Drain and transfer to a mixing bowl. Mash thoroughly until smooth.
- In the bowl with mashed potatoes, add half the shredded cheese along with salt and pepper to taste. Mix until smooth.
- Incorporate chopped green onions and egg into the mixture. Stir until fully combined.
- Roll small portions into balls, about the size of a golf ball, and place on a parchment-lined tray.
- Coat each ball in breadcrumbs until fully covered, then place back on the tray.
- Heat oil in a frying pan over medium heat until hot. Fry bites in batches for 3–4 minutes per side until golden brown, or bake at 400°F for 20 minutes.
