  • 2 cups All-Purpose Flour substitute with gluten-free flour for a gluten-free version
  • 1 teaspoon Baking Soda acts as a leavening agent
  • 1/2 teaspoon Salt can use kosher salt as a substitute
  • 1/2 cup Butter (softened) margarine can be used instead
  • 1 cup White Sugar brown sugar can add a deeper flavor profile
  • 2 large Eggs ground flaxseed mixed with water is a great vegan alternative
  • 1 cup Sour Cream Greek yogurt makes a suitable swap
  • 1 teaspoon Vanilla Extract pure vanilla is preferred for best taste
  • 1 teaspoon Banana Extract omit if unavailable
  • 2 cups Mashed Ripe Bananas very ripe bananas yield the best results
For the Frosting
  • 8 oz Cream Cheese (softened) mascarpone can be used as a substitute
  • 1/4 cup Butter (for frosting, softened) vegan butter is a great alternative
  • 2 to 3 cups Sifted Confectioners’ Sugar mix with granulated sugar for a different texture if needed
  • 1 teaspoon Vanilla Extract (for frosting) use the same type as in the bars

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and butter a 9x13 inch baking pan.
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. Cream together butter and sugar until light and fluffy. Scrape down sides.
  4. Add eggs one at a time, mix in sour cream, vanilla extract, and banana extract.
  5. Gradually add dry ingredients to wet ingredients, and fold in mashed bananas.
  6. Pour batter into prepared pan and bake for 22-25 minutes until a toothpick comes out clean.
  7. Let bars cool in pan for 10 minutes, then cool completely on a wire rack.
  8. Beat softened cream cheese and butter until smooth, add confectioners’ sugar and vanilla extract.
  9. Spread cream cheese frosting over cooled banana bars.
  10. Let set, slice into squares, and serve.

Notes
