- Preheat the grill to high heat, about 500°F (260°C) and clean the grill grates.
- In a medium saucepan, melt the butter over low heat. Add minced garlic and stir until aromatic, about 1-2 minutes. Mix in lemon juice, zest, parsley, sea salt, and pepper.
- Place cleaned oysters on the grill, rounded side up, and grill for 2-3 minutes until edges curl.
- Drizzle about 1 teaspoon of lemon butter sauce over each grilled oyster and close the grill lid. Cook for an additional 1-2 minutes.
- Remove grilled oysters using tongs and transfer to a serving platter. Garnish with extra parsley and serve with lemon wedges.
