  3. In another bowl, whisk together the cashew butter, honey (or maple syrup), lemon juice, lemon zest, vanilla extract, and egg (or flax egg).
  4. Pour the wet mixture into the dry ingredients and mix until there are no dry spots.
  5. Drop cookie dough onto the baking sheet, spacing them about 2 inches apart, and gently flatten each mound.
  6. Bake for 9-11 minutes until set on top and slightly golden.
  7. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
