Method
 

Preparation Steps
  1. Preheat your oven to 425°F (218°C). Position the oven rack in the center for even baking.
  2. Place pre-made pizza crust or flatbreads on a lined baking sheet.
  3. Spread a layer of red enchilada sauce over the flatbread.
  4. Sprinkle shredded mozzarella and Colby jack/Monterey jack cheese, then add topped chicken, red onion, and corn.
  5. Bake for 8-10 minutes until the cheese is bubbly and golden brown.
  6. Let the flatbread cool for 5 minutes, then garnish with cilantro and queso fresco.
  7. Mix mayonnaise, lime juice, and chili powder for the elote sauce.
  8. Slice the flatbread and drizzle with elote sauce before serving.
