  1. Preheat your oven to 350°F (175°C) and prepare a mini muffin pan by spraying it with flour-based baking spray.
  2. In a small bowl, combine 1/2 cup of granulated sugar with 1 teaspoon of cinnamon and mix well.
  3. In a separate bowl, whisk together 1 1/2 cups of all-purpose flour, 2 teaspoons of baking powder, 1/2 teaspoon of salt, and 1/4 teaspoon of nutmeg.
  4. Cream together 1/2 cup of vegetable shortening and 3/4 cup of granulated sugar until light and fluffy, then add in 1 large egg.
