Ingredients
  

Chicken and Vegetables
  • 1 pound chicken breasts skinless and boneless
  • 2 cups bell peppers sliced, any color
  • 1 cup onion sliced
  • 1 tablespoon olive oil
Cheesy Topping
  • 1 cup cheddar cheese shredded
  • 1/2 cup cream cheese softened
For Serving
  • 4 rolls sub sandwich rolls or hoagie rolls

Method
 

Preparation
  1. Place the chicken breasts in the slow cooker and season with salt and pepper.
  2. Add bell peppers and onion on top of the chicken.
  3. Drizzle olive oil over the top.
  4. Cover and cook on low for 4-6 hours until chicken is tender.
Final Assembly
  1. Once cooked, shred the chicken with two forks and mix with the veggies.
  2. Stir in the cream cheese and half of the cheddar until melted and combined.
  3. Fill the rolls with the chicken mixture and top with remaining cheese.
  4. Broil for 2-3 minutes until cheese is bubbly and golden.

  1. Allow to cool for a few minutes before serving.
