Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Gather your ingredients and prepare the marinade.
  2. Season the pork loin generously with salt and pepper on all sides. Score the surface lightly with a sharp knife.
  3. Combine Coca-Cola, brown sugar, soy sauce, Dijon mustard, and minced garlic in a large bowl. Stir until sugar is fully dissolved.
  4. Place the pork loin into a resealable bag or shallow dish and pour the marinade over it. Seal and refrigerate for at least 2 hours, preferably overnight.
  5. Sear the marinated pork in a heated skillet for 2-3 minutes on each side until golden-brown.
