- Preheat your oven to 350°F (175°C). Gather your ingredients and prepare the marinade.
- Season the pork loin generously with salt and pepper on all sides. Score the surface lightly with a sharp knife.
- Combine Coca-Cola, brown sugar, soy sauce, Dijon mustard, and minced garlic in a large bowl. Stir until sugar is fully dissolved.
- Place the pork loin into a resealable bag or shallow dish and pour the marinade over it. Seal and refrigerate for at least 2 hours, preferably overnight.
- Sear the marinated pork in a heated skillet for 2-3 minutes on each side until golden-brown.
- Transfer the seared pork to a baking dish, pour remaining marinade over it, and roast in the oven for about 1 hour, until internal temperature reaches 145°F (63°C).
- Let the pork rest for 10 minutes before slicing. Drizzle any leftover sauce on top when serving.
