  • 1 cup shelled pistachios
  • 1/2 cup chopped almonds
  • 1 cup rice flour or gluten-free all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp vanilla bean or extract
  • 1 tbsp lime zest
  • 2 tbsp lime juice
  • 2 large eggs or flax eggs
  • 1/2 cup macadamia oil or neutral oil
  • 1/3 cup honey or maple syrup
For the Avocado Frosting
  • 2 ripe avocados
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil melted

Method
 

Baking Steps
  1. Preheat your oven to 350°F (175°C) and prepare the mini loaf pans.
  2. Mix together the ground pistachios, chopped almonds, rice flour, baking powder, and salt.
  3. Whisk together the eggs, macadamia oil, honey, lime zest, and lime juice in a separate bowl.
  4. Gradually mix the dry ingredients into the wet mixture until just combined.
  5. Pour the batter evenly into the prepared loaf pans and bake for 25-30 minutes.
  6. Let the loaves cool in the pans for 10 minutes before transferring to a wire rack.
  7. Blend avocados, maple syrup, melted coconut oil, and vanilla until creamy for frosting.
  8. Spread the avocado frosting over cooled loaves and slice to serve.
