  • 1 cup Lettuce Finely shredded
  • 1 cup Cheddar Cheese Or skip for a vegan version
For the Shell
  • 4 pieces Tortillas Warm for better folding

Method
 

Preparation
  1. Wash and peel the potatoes, cut into bite-sized pieces, and par-boil in salted water for about 8-10 minutes until fork-tender.
  2. In a mixing bowl, combine olive oil and seasonings, add the par-boiled potatoes, and toss until well-coated.
  3. Preheat oven to 425°F (220°C), spread potatoes on a baking sheet, and roast for 25-30 minutes, flipping halfway.
  4. Blend mayonnaise and chipotle peppers until smooth and creamy to make the sauce.
  5. Warm tortillas in aluminum foil in the oven during the last 5-10 minutes of roasting.
  6. Assemble tacos by adding roasted potatoes, drizzling sauce, and adding toppings before folding.
