  • 1 Tbsp Fresh Ginger Grated.
  • 1 medium Red Bell Pepper Sliced.
For the Broth
  • 1 can Coconut Milk Use light coconut milk for a lower-calorie option.
  • 3 cups Fish or Chicken Broth Vegetable broth for vegetarian.
  • 2 Tbsp Lime Juice Fresh juice preferred.
For Seasoning
  • 1 Tbsp Fish Sauce Can be omitted or replaced with soy sauce.
  • 1 tsp Sugar Optional, can substitute with honey.
  • to taste Salt Essential for seasoning.
  • to taste Pepper Essential for seasoning.
For Garnish
  • 1 handful Fresh Cilantro Chopped.
  • 2 pieces Lime Wedges For serving.

Method
 

Steps to Prepare
  1. In a large pot, heat olive oil over medium heat. Add onion and sauté for about 5 minutes until translucent.
  2. Stir in minced garlic and grated ginger, cooking for an additional 1-2 minutes.
  3. Add sliced red bell pepper and cook for 3-4 minutes until softened.
  4. Pour in coconut milk and broth, stir, and bring to a simmer over medium-high heat.
  5. Add lime juice, fish sauce, and sugar, seasoning with salt and pepper to taste. Stir well.
  6. Gently place fish fillets into the simmering pot and simmer for 5-7 minutes until cooked through.
  7. Stir in chopped cilantro before serving.
  8. Ladle soup into bowls and garnish with lime wedges.
