Cooking Instructions
  1. In a large pot, heat 2 tablespoons of sesame oil over medium heat until it shimmers.
  2. Add 3 cloves of minced garlic and 1 tablespoon of grated ginger, stirring continuously for about 1 minute.
  3. Pour in 6 cups of chicken or vegetable broth and bring to a rolling boil.
  4. Stir in 2 tablespoons of soy sauce, 1 tablespoon of rice vinegar, and optional chili paste.
  5. Gently add 1 pound of frozen potstickers or dumplings into the simmering broth and cook for about 4-6 minutes.
  6. Carefully stir in 1 cup of sliced mushrooms and let simmer for an additional 2 minutes.
  7. Fold in 1 cup of baby spinach and let it wilt for about 1 minute.
  8. Season the soup with salt and pepper to taste.
  9. Ladle the soup into bowls, ensuring each bowl has dumplings and veggies.
  10. Garnish with sliced green onions and fresh cilantro.
