  • 1 cup Water use boiling water for best texture
  • 1 teaspoon Sea Salt season during cooking
Toppings
  • 1 large Egg poached, fried or soft-boiled
  • 1 medium Avocado ripe Hass, cut fresh
  • 2 tablespoons Grated Parmesan Cheese optional, skip for dairy-free
  • Fresh Herbs e.g., parsley, chives, cilantro
  • Black Pepper to taste

  • 2 slices Crispy Bacon or turkey bacon for leaner option
  • 1 link Turkey Sausage or vegetarian sausage for plant-based
  • 1 cup Roasted Cherry Tomatoes

Method
 

Cooking Instructions
  1. Bring 1 cup of water to a rolling boil in a medium saucepan. Add the rolled oats and a pinch of sea salt, reduce heat to low, cover, and simmer for about 5 minutes until tender.
  2. Remove saucepan from heat and let the oats rest, covered, for an additional 3 minutes.
  3. In a small pot, bring water to a gentle simmer. Crack an egg into a small bowl and carefully slide it into the simmering water. Poach for about 3 minutes.
  4. In a serving bowl, spoon the warm oats, top with the poached egg, slices of fresh avocado, grated Parmesan, and fresh herbs, finishing with a dash of black pepper.
  5. Serve immediately and enjoy while warm.
