Cooking Instructions
  1. In a medium saucepan, bring 1 cup of water to a rolling boil over medium-high heat. Add 1 cup of rolled oats and a pinch of salt. Stir and reduce heat to low, cover, and simmer for 5 minutes. Let it rest for an additional 3 minutes.
  2. In a small pot, bring water to a gentle simmer. Crack an egg into a bowl, then carefully slip it into the simmering water. Cook for 3 minutes until the whites are set and the yolk remains soft. Lift with a slotted spoon and let it drain.
  3. Spoon the oatmeal into a bowl, creating a nest in the center for the poached egg. Gently place the poached egg in the center.
  4. Slice the avocado in half, remove the pit, scoop out the flesh, and arrange it over the oatmeal. Sprinkle with Parmesan cheese, fresh herbs, and black pepper.
  5. Serve immediately for the best taste and texture.
