  1. Preheat your oven to 325°F (160°C) and prepare your Dutch oven for braising the beef rolls.
  2. Cut the top-round slices in half widthwise and pound them to a thickness of about 1/8 to 1/4 inch.
  3. Mince 4 cloves of garlic and mix with parsley, cheese, breadcrumbs, salt, and pepper to create the filling.
  4. Lay slices of prosciutto over the beef, spread the filling, and roll tightly, securing with toothpicks.
  5. Heat olive oil in the Dutch oven and brown the rolls on all sides until golden.
  6. Deglaze the pot with dry red wine, scraping up browned bits and letting it simmer.
  7. Add beef broth, crushed tomatoes, remaining garlic, and Italian seasoning, then return the beef rolls.
