  • 1 block Super Firm Tofu Choose vacuum-sealed for best results.
  • 1/2 cup Vegan Yogurt (Unsweetened) Can substitute with cashew cream or coconut yogurt.
  • 2 tablespoons Dijon Mustard Any mustard works, but Dijon is preferable.
  • 2 tablespoons Agave (or Sugar, Syrup) Maple syrup or brown sugar can also be used.
  • 1 tablespoon Lemon Juice & Zest Lime juice works as a substitute.
  • 2 tablespoons Olive Oil (or Neutral Flavored Oil) Avocado oil is a good alternative.
  • 2 tablespoons Soy Sauce Tamari serves as a gluten-free option.
  • 2 cloves Minced Garlic Garlic powder can substitute if fresh is unavailable.
  • 2 tablespoons Nutritional Yeast Consider vegan parmesan if not available.
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Onion Powder
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Thyme
For Serving
  • 4 pieces Warm Pita Bread Gluten-free pita can be used if needed.
  • 1 cup Vegan Tzatziki A must-have for the full Mediterranean experience!

Method
 

Step-by-Step Instructions
  1. Prepare Marinade: In a mixing bowl, whisk together the vegan yogurt, Dijon mustard, agave, lemon juice and zest, olive oil, soy sauce, minced garlic, nutritional yeast, smoked paprika, onion powder, oregano, thyme, and a pinch of salt and pepper. Mix until smooth and creamy. Reserve 2 tablespoons of the marinade for later.
  2. Prepare Tofu: Pat the super firm tofu dry with paper towels and cut into bite-sized chunks.
  3. Marinate Tofu: Toss tofu chunks in the marinade, cover, and let marinate for at least 15 minutes.
  4. Cook Tofu: Thread marinated tofu onto skewers. Heat a skillet over medium heat, add olive oil, and cook tofu for about 3 minutes on each side until golden brown.
  5. Finalize & Serve: Toss cooked tofu in reserved marinade, warm pita bread, and serve with vegan tzatziki.

Notes
