- Prepare Marinade: In a mixing bowl, whisk together the vegan yogurt, Dijon mustard, agave, lemon juice and zest, olive oil, soy sauce, minced garlic, nutritional yeast, smoked paprika, onion powder, oregano, thyme, and a pinch of salt and pepper. Mix until smooth and creamy. Reserve 2 tablespoons of the marinade for later.
- Prepare Tofu: Pat the super firm tofu dry with paper towels and cut into bite-sized chunks.
- Marinate Tofu: Toss tofu chunks in the marinade, cover, and let marinate for at least 15 minutes.
- Cook Tofu: Thread marinated tofu onto skewers. Heat a skillet over medium heat, add olive oil, and cook tofu for about 3 minutes on each side until golden brown.
- Finalize & Serve: Toss cooked tofu in reserved marinade, warm pita bread, and serve with vegan tzatziki.
