  • 2 tablespoons Cornstarch

For the Stir-Fry
  • 2 tablespoons Vegetable Oil or sesame oil
  • 3 cloves Garlic minced
  • 1 tablespoon Ginger fresh, minced
  • 2 pieces Thai Red Chilies adjust for spice preference
  • 1 medium Green Bell Pepper
  • 1 medium Carrot sliced into matchsticks
For the Noodles and Sauce
  • 12 ounces Udon Noodles or ramen
  • 2 tablespoons Green Onion for garnish
  • 3 tablespoons Oyster Sauce or mushroom sauce
  • 2 tablespoons Dark Soy Sauce
  • 1 tablespoon Brown Sugar or honey
  • 1/2 teaspoon Crushed Red Pepper optional
  • 1 teaspoon Toasted Sesame Oil use sparingly
  • 1 cup Chicken Stock or vegetable broth

Step-by-Step Instructions
  1. Marinate Beef: In a mixing bowl, combine the sliced beef with salt, soy sauce, cornstarch, and baking soda. Let marinate for 20-30 minutes at room temperature.
  2. Prepare Noodles: Cook udon noodles according to the package instructions, aiming for 1-2 minutes less than suggested. Drain and toss lightly with vegetable oil.
  3. Stir Fry Beef: Heat the wok over high heat, add vegetable oil, and stir-fry marinated beef for 3-4 minutes until browned. Cook through, then transfer to a plate.
  4. Sauté Aromatics: In the same wok, add more oil if needed, then stir-fry garlic, ginger, and the white onion for 30 seconds. Add chilies, bell pepper, and carrot, cooking for 2-3 minutes.
  5. Combine Ingredients: Pour in oyster sauce, dark soy sauce, brown sugar, and chicken stock, bringing to a simmer. Add the noodles and beef back, tossing everything together for 2-3 minutes.
  6. Serve: Garnish with green onions and sesame seeds, serve hot, and enjoy!
