Method
 

Step-by-Step Instructions
  1. Preheat your oven to 450°F (232°C).
  2. Melt the butter in a large skillet over medium-low heat and caramelize the onions for 30-40 minutes.
  3. Add fresh spinach and cook for 2-3 minutes until wilted, then stir in minced garlic for an additional 30 seconds.
  4. Butterfly the pork tenderloin lengthwise, season with salt and pepper, and prepare for filling.
  5. Spread cranberry sauce over the pork, add the spinach and onion mixture, then crumble goat cheese on top.
  6. Roll the pork tightly, tie with kitchen twine, and season the outside with salt and pepper.
  7. Roast in the preheated oven for 30-35 minutes until internal temperature reaches 140-145°F.
  8. Let rest for 20 minutes before slicing and serve with extra cranberry sauce.
