For the Bake
  • 4 cups broccoli florets can substitute with bell peppers or zucchini
  • 4 cloves minced garlic fresh is best
  • 2 tablespoons olive oil can use avocado oil
  • 12 ounces chicken sausage or plant-based sausage
  • 1 pound frozen tortellini or fresh tortellini, adjust baking time
  • 1 cup Parmesan cheese can substitute mozzarella or Italian cheese blend
  • 1/2 teaspoon red pepper flakes optional
Optional Toppings
  • 1/4 cup fresh basil for garnish
  • 1/4 teaspoon crushed red pepper flakes optional

Method
 

Steps
  1. Preheat your oven to 400ºF (200ºC) and line a sheet pan with parchment paper.
  2. In a large bowl, toss the broccoli with minced garlic, olive oil, salt, and pepper. Spread on the sheet pan in a single layer and roast for 10 minutes.
  3. Slice the chicken sausage into thin rounds and combine with the remaining olive oil in a separate bowl.
  4. Increase the oven temperature to 450ºF (232ºC).
  5. Add the roasted broccoli to the bowl with the sausage, stir in the frozen tortellini and half of the Parmesan.
  6. Spread the mixture back onto the sheet pan and bake for 12-15 minutes.
  7. Remove from the oven and sprinkle remaining Parmesan on top before serving.
