  • 1 Red Bell Pepper can be replaced with green bell pepper
  • 1 Red Onion can substitute with yellow onion
  • 2 cloves Garlic minced or 1/4 tsp powdered
  • 1 lb Ground Beef or ground turkey/chicken
  • 1 cup Italian Style Breadcrumbs or regular/gluten-free options
  • 1/2 cup Parmesan Cheese grated or shredded
  • 2 Eggs or flax eggs for vegan
  • 1 tbsp Tomato Paste or ketchup if needed
  • 1 tsp Salt
  • 1 tsp Black Pepper to taste
  • 1/4 cup Fresh Parsley or substitute with dried parsley
  • 6 slices Deli Ham or use turkey or omit for vegetarian
  • 8 leaves Fresh Basil Leaves or 1 tsp dried basil
  • 1 cup Shredded Mozzarella Cheese or provolone/fontina
For Serving
  • 2 cups Marinara Sauce homemade or store-bought
  • 4 cups Cooked Pasta or Zucchini Noodles or rice/polenta as alternatives

Method
 

Step‑by‑Step Instructions for Sicilian Meatloaf
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat olive oil and sauté chopped red onion and red bell pepper for about 5 minutes until softened.
  3. Combine ground beef, breadcrumbs, Parmesan, eggs, tomato paste, salt, pepper, parsley, and the cooled vegetable mixture in a mixing bowl.
  4. Shape the mixture into a rectangle of approximately 8"x15" on parchment paper.
  5. Layer deli ham, basil leaves, and mozzarella cheese down the center of the meat rectangle.
  6. Carefully roll the meat mixture jelly-roll style, sealing the fillings inside.
  7. Transfer the meatloaf to a baking sheet seam-side down and bake for about 1 hour, until browned and cooked through.
  8. Let the meatloaf rest for 10 minutes covered with foil before slicing.
