Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C). Sauté the chopped red onion and red bell pepper in olive oil over medium heat until translucent, about 5 minutes. Stir in minced garlic and set aside to cool.
  2. In a large mixing bowl, combine ground beef, Italian style breadcrumbs, Parmesan cheese, and eggs. Add tomato paste, salt, black pepper, sautéed vegetables, and parsley. Mix everything by hand until well combined.
  3. Lay a sheet of parchment paper flat and shape the meat mixture into a rectangle measuring approximately 8 inches by 15 inches.
  4. Layer slices of deli ham over the meat rectangle, leaving a 1-inch border. Top with fresh basil and shredded mozzarella cheese.
  5. Roll the meatloaf using the parchment paper, pinching the ends to seal in the filling.
  6. Transfer the rolled meatloaf to a lined baking sheet, seam side down, and bake for 1 hour until cooked through.
