Step-by-Step Instructions
  1. Prepare the Meatball Mixture: In a large bowl, combine ground beef, almond flour, minced garlic, salt, and pepper until just combined.
  2. Form the Meatballs: Shape the mixture into meatballs about 1 inch in diameter.
  3. Arrange Meatballs in the Slow Cooker: Place the meatballs in a single layer in the slow cooker, ensuring space between them.
  4. Prepare the Sauce: In a separate bowl, whisk together pineapple juice, honey, white wine vinegar, ketchup, garlic powder, red onion, red pepper, and pineapple chunks.
  5. Slow Cook the Meatballs: Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Thicken the Sauce (Optional): Mix arrowroot powder with water and stir into sauce over medium heat until thickened.
