Ingredients
  

For the Base
  • 3 cups Sweet Potatoes orange-fleshed varieties preferred
  • 1 medium Onion or shallots for milder flavor
  • 1 cup Green Pepper or your favorite bell pepper
  • 2 cloves Garlic fresh preferred, or garlic powder
  • 1 pound Turkey Sausage can substitute with vegetarian sausage
For the Custard
  • 6 Eggs substitutions may change texture
  • 1 cup Milk any non-dairy milk is suitable
  • 1 tablespoon Fresh Thyme dried thyme can be used
For the Topping
  • 1 cup Shredded Cheese cheddar or any good melting cheese

  • Greased 9x13-inch casserole dish

Method
 

Instructions
  1. Preheat the oven to 350°F (175°C).
  2. Chop the sweet potatoes, onion, green pepper, and garlic into uniform pieces.
  3. In a sauté pan, heat a drizzle of avocado oil over medium heat and add the vegetables, sauté for 8-9 minutes.
  4. Layer the sautéed vegetables evenly in a greased casserole dish.
  5. In the same pan, cook the turkey sausage over medium heat until fully browned, about 5-7 minutes.
  6. Whisk together the eggs, milk, thyme, salt, pepper, and shredded cheese in a large mixing bowl.
  7. Pour the egg mixture over the layered vegetables and sausage in the casserole dish.
  8. Bake the casserole for 40-45 minutes until the edges are set.
  9. Allow to cool for 5-10 minutes before serving.
