  • 65 g Desiccated Coconut Ground almonds can be used for a nutty twist
  • 100 g Caster Sugar Superfine sugar preferred, white granulated sugar is an alternative
  • 195 g Plain Flour Gluten-free flour blends can replace it for a gluten-free version
For the Passionfruit Filling
  • 395 g Sweetened Condensed Milk Evaporated milk can be used but will need more sugar
  • 60 ml Fresh Lemon Juice Lime juice can work well too
  • 60 ml Strained Passionfruit Pulp Store-bought passionfruit puree is a good substitute
For the Topping
  • 1.5 teaspoons Powdered Gelatine Substitute with agar-agar for a vegan option
  • 60 ml Cold Water Make sure it's cold during mixing
  • 125 ml Strained Passionfruit Pulp Optional: add a few passionfruit seeds for texture

Step-by-Step Instructions for Passionfruit Slice
  1. Preheat your oven to 180°C (350°F) and line an 8-inch square baking tin with parchment paper.
  2. Combine melted unsalted butter, desiccated coconut, caster sugar, and plain flour to make the dough for the coconut shortbread base. Parbake for about 10 minutes.
  3. Prepare the filling by whisking sweetened condensed milk, fresh lemon juice, and strained passionfruit pulp until smooth, then pour over the slightly cooled base.
  4. Mix the remaining passionfruit pulp, powdered gelatine, and cold water; heat to dissolve, then pour over the filling and chill for at least 2 hours.
  5. Once the jelly has set, lift out and cut into squares or rectangles, serving chilled.
