Method
 

Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F), or 200°C (390°F) for a non-fan-forced oven.
  2. Drizzle honey over each sheet of puff pastry and spread it evenly.
  3. Sprinkle chopped walnuts, crumbled blue cheese, and grated Parmesan evenly across the honey-drizzled puff pastry, adding fresh thyme, sea salt, and cracked pepper.
  4. Roll each pastry sheet into a log and slice each log lengthwise into two long pieces.
  5. Twist each length of pastry into a smooth coil shape and brush with milk.
  6. Place the shaped pastries in the preheated oven and bake for 25–30 minutes.
  7. Remove from the oven and cool slightly on a wire rack, then sprinkle with extra fresh thyme before serving.
