  • 2 tablespoons Sesame Seeds Optional but recommended.
  • 2 stalks Green Onions Chopped.

Method
 

Step-by-Step Instructions
  1. In a large skillet, heat olive oil over medium heat. Add diced onion and sauté for 3-4 minutes until translucent.
  2. Add minced garlic to the skillet and sauté for 1-2 minutes until golden.
  3. In a mixing bowl, whisk together soy sauce, maple syrup, rice vinegar, and toasted sesame oil.
  4. Pour the sauce into the skillet and cook for 1 minute.
  5. In a small bowl, dissolve cornstarch in water. Gradually add this to the skillet, stirring until sauce thickens.
  6. Add the drained cooked chickpeas to the skillet and toss until coated.
  7. Simmer for 5-7 minutes, stirring occasionally, and adjust seasoning as needed.
  8. Garnish with sesame seeds and green onions. Serve over rice or quinoa.
