Method
 

Preparation
  1. In a large mixing bowl, whisk together the olive oil and lemon juice for about 30 seconds until well combined. Add salt, pepper, and parsley.
  2. Add the pitted Medjool dates into the bowl of dressing and gently mix for about 1 minute.
  3. Incorporate the sliced celery stalks and chopped celery leaves, tossing gently for about 30 seconds.
  4. Add fresh mandarin orange slices and shelled pistachios, tossing for an additional 30 seconds to a minute.
  5. Taste and adjust seasoning if necessary, mixing gently to incorporate any adjustments.
