For the Tacos
  • 8 pieces corn tortillas warm them first for pliability
  • 1 cup shredded mozzarella cheese

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and gather all ingredients.
  2. In a medium saucepan, melt butter over medium heat and whisk in flour for about 1 minute.
  3. Slowly pour in milk and chicken broth, whisking until smooth and thickened for 3-4 minutes.
  4. Blend in sour cream, green chilis, cumin, and chili powder. Simmer for an additional 3-5 minutes.
  5. In a large bowl, combine shredded chicken, corn, and green onions. Pour sauce over and fold to combine.
  6. Warm the tortillas in a skillet or microwave until pliable.
  7. Fill tortillas with 2-3 tablespoons of the chicken mixture and top with mozzarella cheese.
  8. Bake for 12-15 minutes until tortillas are golden brown and cheese is bubbling.
