Step‑by‑Step Instructions
  1. Preheat your oven to 375°F (190°C). Line a baking pan with parchment paper.
  2. In a large mixing bowl, combine the oats, oat flour, chopped walnuts, chia seeds, baking soda, and salt. Whisk gently.
  3. In a separate bowl, whisk together the cashew butter, honey (or maple syrup), lemon juice, lemon zest, vanilla extract, and your egg or flax egg until smooth.
  4. Pour the wet ingredients into the dry mixture. Stir gently until fully combined, ensuring there are no dry patches.
  5. Using a small cookie scoop, drop the dough onto the prepared baking pan, spacing them about two inches apart. Flatten each dough ball slightly.
  6. Bake for 9-11 minutes, until the tops are set and lightly golden.
  7. Let the cookies cool on the pan for a few minutes, then transfer them to a wire rack to cool completely.
