Filling

  • 2 tbsp Lime zest Fresh zest is best
  • 0.5 cup Fresh lime juice Use freshly squeezed juice
  • 1 drop Food coloring Optional for visual appeal

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C).
  2. Grease an 11x7 inch baking dish or line it with parchment paper.
  3. In a food processor, combine all-purpose flour, powdered sugar, salt, and cold butter. Pulse until coarse crumbs form.
  4. Press the mixture into the bottom of the prepared pan and bake for 18-20 minutes until golden.
  5. In a mixing bowl, whisk together granulated sugar and a little flour, then add eggs one at a time, whisking until smooth. Mix in lime juice and zest.
  6. Pour the lime filling over the hot crust and bake for an additional 18-20 minutes.
  7. Let cool in the pan for 1 hour, then refrigerate for 1-2 hours before slicing.
  8. Dust with powdered sugar just before serving and enjoy your Lime Bars.
